Unlike many other recipes, Sate Maranggi is known for its use of beef. Previously, meat had been marinated with various spices so that the final result was relatively no need for additional seasoning. So many theories that tell the origin of this Sangg Maranggi recipe. Besides there is another version that comes from Cianjur, it is also said that the first to create it was a person named Mak Ranggi hundreds of years ago in Purwakarta. From this legend the name of this satay originated. One other version is the acculturation of Chinese culinary techniques introduced by migrants in the past. This technique of marinating meat with a rich and sweet taste is said to be similar to jerky. It is interesting, considering that there are many other satay versions in Indonesia that rely more on topical seasoning than marinating.

But whatever the story, Sate Maranggi is an Indonesian culinary collection that is worth preserving. Especially as one of several archipelago cuisine that has been known in foreign countries before compared to others. For culinary activists, this is the time to be passionate about trying to cook it and promote its greatness to all corners of the world.

The following ingredients and how to cook Maranggi Satay.

Ingredients :

  • 500 grams of beef
  • 2 large papaya leaves
  • sweet soy sauce to taste
  • 1 tablespoon of brown sugar (puree)
  • 2 tablespoons of tamarind
Ground spices :

  • 7 cloves of shallot
  • 2 cloves of garlic
  • 3 cm ginger
  • 3 cm galangal
  • 1 teaspoon coriander (roasted)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
Chili sauce, soy sauce :

  • 1 tomato
  • 5 cayenne peppers
  • 2 shallots
  • half a piece of lime
  • 5 tablespoons of soy sauce
How to cook :
  1. Blend all soy sauce ingredients, then set aside
  2. Wrap the meat using papaya leaves to soften, let stand for 30 minutes.
  3. Blend the spices and saute until fragrant.
  4. Combine stir-fried meat and seasonings, add tamarind and brown sugar.
  5. Stir and knead until even
  6. Skewer using a skewer
  7. Grilled satay, occasionally spread with sweet soy sauce. burn until cooked.
  8. Serve satay with soy sauce.
  9. Maranggi Satay is ready to be enjoyed.
