Original Padang Sate Recipe That Is Tasty And Delicious

Ingredients :
  • 500 grams of chicken meat
  • 5 pieces of orange leaf
  • 3 lemongrass bruises
  • 4 bay leaves

  • 2 tablespoons of rice flour and 1 tablespoon of cornstarch dissolve.
Ground spices :
  • 10 cloves of shallot
  • 6 cloves of garlic
  • 6 large red chilies
  • 10 red cayenne peppers
  • 3 candlenuts
  • 4 cm ginger
  • 4 cm turmeric
  • 4 cm galangal
  • 10 cm cinnamon
  • 1 tablespoon of coriander
  • 1 teaspoon of pepper
  • 1 teaspoon cumin
  • 3 deer / flower star anise
  • 6 cardamom grains
  • 6 clove grains
  • 1 clove grain
  • 1 nutmeg
  • 1 tablespoon of curry powder (optional, skip it)
How to make :
  1. Wash chicken meat thoroughly.
  2. Cut the chicken according to taste, but not too small, because later the size of the meat will shrink
  3. Blend the spices, then saute the spices until fragrant.
  4. Add lemongrass, orange leaves, bay leaves, and turmeric leaves.
  5. Saute until fragrant
  6. Add meat, stir briefly
  7. Add salt to taste.
  8. Saute for a few moments so the spices seep into the meat.
  9. Pour enough water, stir well
  10. Cover the pan and cook until the meat is cooked and tender.
  11. If the water has shrunk and the meat is not soft, add more water to taste.
  12. After the meat is cooked, remove the meat and separate / drain from the sauce.
  13. Skewers using a skewer.
  14. Burn it on the embers for a while or just smell good, it doesn't take too long.
  15. For the broth, if it is too thick, you can add enough water, cook it again until it boils
  16. Then pour the rice flour and cornstarch solution.
  17. Correct the taste, add salt if it is lacking.
  18. Cook the sauce until it thickens and bursts.
  19. Lift the Padang satay with its spicy sauce, serve with rice cake and topping with fried onions.
  20. Sate Padang is ready to be enjoyed.
